Ingredients
1kg mahi mahi (or white fish)
1 eggplant
1 carrot
Handful of green beans
1 onion
Spring onion
1 piece ginger
500g pumpkin
Curry power
1 tin coconut milk
TIP
Use coconut oil as an alternative to canola or vegetable oil – it’s much healthier for your body

- Cut fish into cubes
- Slice vegetables into cubes
- Fry onion, ginger and pumpkin in coconut oil
- After pumpkin is half cooked, place eggplant, carrot and beans into pan
- Add curry powder and salt and pepper to taste
- Add fish, cook for a couple of minutes
- Finish off with coconut milk and spring onion
